In the 1950s, a Santa Maria, California butcher named Bob Schutz realized nobody was buying this odd triangular cut from the bottom sirloin. He started seasoning it simply with salt, pepper, and garlic, then grilling it over red oak. The 'Santa Maria Tri-Tip' was born.
